Greetings, Friends! Hello! I’m Food Stylist Sarah Blair at Pure palate, a chef, culinary producer, food stylist, health enthusiast, exercise junkie, beauty aficionado, globe traveller, and artist. I reside on the beach in Southern California, yet my roots are in the rough mountains of New England. My major passion is all things edible, but I’m always striving to be my most genuine self. I never turn down a wonderful bowl of spaghetti or a luscious chocolate molten cake, but I do so in moderation. I constantly try to work harder, live more passionately, be brighter and braver, and welcome new experiences in life. It’ll always be like a work in progress.

I have a photo of myself eating a broccoli floret when I was eight months old. I recall adding “zhuzh” to my top ramen with spoonfuls of toasted sesame oil and silky strands of a beaten egg when I was nine years old. My go-to after-school snack was pita pizzas with various toppings (such as artichoke hearts and red onion). My roommates were getting Domino’s and brownies while I was at college eating homemade seaweed salad. I’ll admit that I’ve spent more time than I should admit scouring the internet for the best breakfast burritos. My adult years have been spent romping and chewing my way over Manhattan’s island and adjacent boroughs, scribbling down locations and hotspots like a dotted treasure map. My list grew as I travelled around the country completing food production jobs. Please let me know if you’d want to accompany me on a dumpling dive in Little Tokyo, a Bibimbap bop in Koreatown, or a taco journey in East LA?? I’m hungry for everything! I’m always thinking about, eating, cooking, strolling, chatting, dreaming about, and living food!

My parents were in charge of “harnessing my chi” long before I even realised what that meant. They are true ‘green thumbs’ who take great delight in our 20-acre slice of NH hill country paradise. They built a tennis court, a man-made swimming pond with a floating dock, an octagonal treehouse, and an impeccably kept vegetable garden dotted with fruit trees and berries to create “Camp Blair.” My playground was our property. “There’s nowhere else I’d rather be,” I remember thinking as I swam to the dock and lay there out of breath with the sun on my face and the air washing over my body. I strive to be present, cheerful, and appreciative every day, whether I’m in the country or a hectic metropolis. (However, I’m not going to lie; sometimes it’s difficult to contain all of my enthusiasm.) My mind is always on my next meal, run, swim, or trip. I’ll keep working on it:)

My passion has always been and will continue to be, outside exploration and action. I used to go on strenuous treks in the Presidential peaks, kayaking through rapids, swimming in lakes and rivers, riding through picturesque countrysides, nordic skiing in our backyard and snowboarding at nearby resorts when I was younger. I’ve always been a SUPER-PRO master of none, but a STRONG “jack of all crafts” athlete. You can always depend on me to provide more than my 100% since I am wickedly brave!! After numerous month-long surf adventures through Costa Rica and Nicaragua, I’ve added surfing and SUPing to my athletic repertoire in recent years, and I now know how to “ride the stoke” at my home break in Manhattan Beach. Even in blizzards, wind, ice, and snow, I’m continuously pushing myself to run longer, swim harder, and trek quicker (remember the fearless part above). I thrive on a challenge and look forward to it! “Hey, anyone can sit at home and watch TV,” my father famously said.

I, Food Stylist Sarah Blair at Pure palate had no clue my 7th-grade science fair project would foreshadow my beauty dominance. “Your Skin in the Sun” was such a hit that I created a full line of organic and pure creams, tinctures, and toners (all packaged in quality watercolour packaging, to boot). I was always concocting facemasks and had a sizable lotion stash. To be honest, I haven’t changed much. I’m still experimenting and developing my lines, conducting research, and caring for my skin to be my best and most confident self. I need to revive that 7th-grade product line… In the future, Pure Palate beauty will be available to you!

My wanderlust began when I was a child and has lasted far into adulthood. Our annual trips to a rural fishing community in Jamaica come to mind. We used to cook fried plantains and johnnycakes with guava jam in the morning, and I can still smell them. We pitched our tent over dunes, lakes, and oceans for many years. Semester at Sea was something I did as a student at the University of Santa Barbara. We travelled across the world, stopping in 10 countries. In my white kimono and slippers, I recall first visiting a Japanese Ryokan and having my first pot of Sukiyaki while sitting cross-legged on the floor. I was plunging into enormous pans of Paella in Spain, eating eclairs and croissants throughout the districts of Paris, and indulging in Oktoberfest in Munich with beers and brats two years later when backpacking around Europe. I spent a year as a gourmet tour guide in Europe when I was 25 years old. On the Black Sea in Bulgaria, I put up a cook tent and brokedanced for my passengers until they consumed all of my spaghetti. On the Greek island of Corfu, we watched the Olympics while sipping ouzo on the beach in white togas. I’ve travelled across Southeast Asia as an adult, drinking coconuts and floating among Thai islands in a Long Tail Boat. We rested in hot springs and snacked on cured moose meat as we drove a camper van across Iceland’s beautiful green mountains and sparkling glaciers. I’m certainly a thrill seeker!

When I was younger, I did watercolour courses with an artist buddy and have been inspired to create ever since. I recall sitting in a Vermont field, attempting to capture the October colours, which included ombre leaves that transitioned from gold to amber, then scarlet and carmine. Over the years, I’ve dabbled with a variety of artistic materials. I taught myself layering methods and aggressive oil and acrylic brushstrokes, and layered fabrics, and was a formidable collager :). I’ve had the good fortune of being able to turn these aesthetic ideas into a profession as a Food Stylist Sarah Blair at Pure palate and Culinary Producer. I establish a vision board and collect my linens, plates, props, and foods to create one entire vision for every food photoshoot, magazine spread, or food television show I produce. I enjoy examining colours, textures, and forms as if they were globs of paint on a palette. What colours may I use together? What role will they play in each other’s lives? What are the elements I’d want to pop? My obsession with watercolours will live on in my mind for the rest of my life.

I was born to work in the culinary industry! I opted to work for Food Network in New York while an undergraduate at the University of California, Santa Barbara. Following my graduation from The French Culinary Institute (now known as the International Culinary Center), I was fortunate enough to be offered an internship there. I worked with the team for the following six months, on everything from the magazine to television shows, advertising, client dinners, recipe testing, photoshoots, and more. My mentors encouraged me to “work behind the line” at a restaurant after the internship to improve as a chef.
I landed a job at Lupa, a well-known Mario Batali Osteria, where I spent two years working hard and exhausting hours with large guys. I recall tying my bandana and preparing myself at 4:30 p.m. on Friday and Saturday nights, breathing slowly and harnessing my strength as if I were about to go into battle. The fire, fury, and elegance of the pace, intensity, and 60, 70, and occasionally 80-hour weeks were all present. Years later, I can appreciate the elegance of the mechanical motions you can produce in limited areas with a quick three-point pivot. On my days off, I had plates flung at my feet, tempers bursting in my ears, and feet so exhausted that I couldn’t move. It was insane! I can now be proud of the sweat, tears, and burns I’ve endured. I wouldn’t alter a thing about it.

As a bicoastal freelance Food Stylist Sarah Blair at Pure palate and Senior Culinary Producer for the past 15 years, I’ve developed my talents. On shows including “Iron Chef America,” “The Chew,” “Chopped,” “The Best Thing I Ever Ate,” “Hungry History,” Rachel; Ray’s 30 Minute Meals,” “Brunch with Bobby,” “Cooking for Real,” and others, I’ve collaborated with top celebrity chefs and talent. I’ve worked with networks including The Food Network, Netflix, Bravo, TLC, ABC, CBS, SPIKE, FOX, The History Channel, and Destination America on shows like “The Final Table,” “Nailed It,” “Bar Rescue,” “BBQ Pitmasters,” and “The Next Great Baker.”

It was time for me to expand my wings and move to the warm Pacific shores of Manhattan Beach after residing in NYC for almost a decade. Every day in California, I eat a large salad in a huge bowl. When I’m outside, with the sun on my freckled face and a fresh wind in the air, I’m at my most clear. I work out every day and am at my best when I go to bed exhausted. Because of my “teeny-tiny tans,” my family refers to me as Goldie, and I use roughly seven sunscreens and moisturisers daily. I’m craving ethnic food, and I’m quite sure dumplings and noodles, and more especially, the times I ate them in Asia, consume 80% of my thoughts. I seldom wear black and am always searching for ways to add a pop of colour to my outfits. This is Pure Palate, and this is me.
